Colombia Amarillo
Colombia Amarillo produces yellow-ripe coffee cherries rather than the familiar red fruit seen on many coffee varieties. At Rancho Cielo, the variety is grown at high elevation in Curití, where the cooler mountain climate contributes to a bright, structured cup.
Honey Process
For honey processing, the coffee cherries are depulped while some of the fruit's mucilage remains on the seed during drying. This approach can emphasize sweetness and body while preserving the coffee's acidity and fruit character.
