This Tabi Honey comes from Finca Santa María, part of Hacienda Cafetera La Pradera in Aratoca, Santander. The coffee is produced by 22 women heads of household, who manage the work from cultivation through the finished lot.
Coffee and Habitat
Finca Santa María is Smithsonian Bird Friendly, organic, and part of Con Manos de Mujer. Coffee is grown beneath a diverse shade canopy that provides habitat for birds and other wildlife while supporting coffee production.
Honey Process
This Tabi lot is grown at 1,775 meters and honey processed.
After harvest, ripe cherries are cleaned and sorted, then fermented whole for 22 hours. Following pulping, the coffee undergoes another 50 hours of controlled anaerobic fermentation before dehydration and mechanical drying to approximately 11% moisture.
