Tabi Honey comes from Finca Santa María in Aratoca, Colombia, where 22 women run the farm. It's certified Smithsonian Bird Friendly and grown under a mixed shade canopy. Sweet tart, strawberry, butterscotch.
Colombia Amarillo is a single-variety micro-lot that Juan David Jiménez Forero processed for us at Rancho Cielo in Curití. Panela, peach, uchuva.
Both are honey processed and roasted medium-light in Seattle. Choose whole bean, or ground if there's no grinder at home.

How it works Rinse the filter, add about 3 heaped tablespoons of coffee, pour a little water and wait 30 seconds, then pour slowly to about 320 ml (11 oz).
